This board is a snapshot, not a standard. Every number on it is dated and sourced. Two things to hold in mind while reading:

The sales numbers are current. They come from Toast pulls between 4 and 16 September 2026 and can be trusted to the day they were taken.

The platform numbers are not. The last full walk of every booking and listing surface was 3 August 2026 — six weeks ago. Anything in section 05 or 06 marked 3 Aug may have been fixed since and nobody wrote it down. Treat that section as a list to re-walk, not a list of live faults.

Names that are retired and still moving

Do not reuse, and correct on sight: Wine Wednesday · Paradise Wednesdays · Ladies Night at Bloom · Sunday Service Brunch · Lamb Chop Tuesdays · Live Music Tuesdays · Bloom Friday Nightlife.

Also retired: Bloom Brunch Experience — Saturday Daytime Dining. Bloom does not serve Saturday brunch. Brunch is Sunday only. This was confirmed on 2 August 2026 and the SpotHopper listing was deleted the next day, but the phrase is still in circulation in older briefs and templates.

Kyle — one thing to fix at the source

The standing project instructions this work runs against still list the old lineup: Lamb Chop Tuesdays, Wine Wednesday, Ladies Night at Bloom, Sunday Service Brunch, and a Saturday Bloom Brunch Experience. All five were superseded by your 2 August decisions. Until that brief is updated, anything built from it will reintroduce retired names — which is exactly the drift this board exists to catch.

The standing specials

Seven offers run every week. Three of them are discounted food items with real unit volume, and those three are the ones that move the cost line. The numbers below are four full weeks of Toast data, 10 August – 6 September 2026.

The three tracked promos together: 4,659 units, $9,305 net, $7,941 cost — 85% blended. Year to date that is 10,396 lamb chops, 6,969 wings and 4,708 oysters, running about $12,000 a month and $64,000 so far this year.

The ratio that explains the whole strategy

Promos are 60% of food units but only 17% of food dollars. Across the entire menu they are 33% of everything sold and 12% of the money.

That is the shape of a loss leader working as designed. It also means promos mechanically inflate the food cost percentage, and any read of that percentage that doesn't strip them out will blame the wrong thing.

Do not cut the promos to fix food cost

Strip the three promos out entirely and non-promo food still runs about 48% cost against a 30% target — roughly $2,600 a week that has nothing to do with the specials. The overspend lives in the other 48% of the menu.

For scale: total product overspend is running about $6,060 a week, or $315,000 a year, against net income of $105,473 for the last eleven months. The promos are not that problem, and cutting them would cost the one night that is provably working.

Wednesday's offer and Wednesday's sales don't match

Hustle and Bloom is built on half-off wine bottles. Wine is 2.0% of revenue — $906 across the whole week, every week. Meanwhile Wednesday has no dining reservation path on Tock at all, which has been flagged since 2 August. The most food-and-wine-led night of the week is the one a guest cannot book a dinner table for.

Two readings, and they need different fixes: either the wine offer isn't landing and the night should lead with something else, or it is landing and there's no way to book it. The Tock gap has to close before that question can be answered honestly.

The attach item nobody is pricing on purpose

Truffle Fries — 118 a week, the number one food attach on every night. Base $8 with a $4 truffle modifier defaulted ON, and the average realized price is $6.57. That is a leak on the single item that rides along with everything else. The modifier decision has been open since 19 July.

What Tuesday proved

Tuesday is the only night with a full before-and-after on the record, and it is the argument for the entire specials programme. The $3 lamb chop and live music launched together in March 2026.

Twenty-six Tuesdays in each window, so it is a clean comparison. Tuesday didn't grow — it stopped falling, while everything around it fell nearly a fifth. That is a 22-point relative outperformance.

The stronger evidence is the share, not the dollars. Tuesday's cut of the week went from 8.1% to 10.0%, and the last three months on record read 12.5%, 12.3%, 12.8% — three consecutive months inside half a point of each other. That is a night with a habit attached to it.

Before the special, January and February ran $1,981 and $2,436 per Tuesday — 3% of the week. December had just done $10,968. August 2026 ran $7,205 per Tuesday, clearing the stated $7K goal, against a long-term target of $10K.

The giveaway math, from the most recent Tuesday

Tuesday 15 September: 317 chops sold, $947.85. At roughly $0.20 of margin given away per chop, that is about $63 — sitting inside $1,323 of other items bought on those same checks. Call it 21 to 1.

Two-thirds of the night's revenue was touched by a check that had lamb chops on it.

The number that decides whether this stays true

Attach rate slipped to 73.7% on 15 September, from 84.9% across the August baseline. Lamb-only checks rose from 8% to 12% of the night.

When a guest attaches, the check is identical to August — $96.12 versus $95.89. The guest who buys around the chops has not changed. There were simply fewer of them, and six of the ten lamb-only checks were late walk-ups between 7:55 and 9:53 PM.

15 September was also a bare Tuesday — no live music. 81 checks and $3.4K of net items, against 148–176 checks and $10.5–11.4K on the two live-music Tuesdays in August. One night is not a trend, but the obvious hypothesis is that the music is doing as much work as the chops. Two or three more of each will settle it.

What pairs with the chops, consistently across August and September: house lemon drops, truffle fries, premium tequila. On 15 September there were 25 tequila pours on lamb checks, truffle fries on 39% of them, wings on 25%.

There are two layers running at Bloom and they get talked about as one thing, which is why the second one goes quiet without anyone noticing.

Layer one is what fills a habit. Layer two is what fills a room on a specific date and gives people something to post. Layer one is healthy. Layer two has no visible pipeline.

That is nine activations in a month — roughly two a week, weighted to Thursday and the weekend. Thursday carried a different theme every single week, which is the clearest example in the record of a night with a reason to come back.

What September looks like

Nothing is on the record. No guest talent, no Thursday themes, no takeovers, no residency dates for September or October.

That may mean the pipeline stopped. It may equally mean it is running and nobody has written it anywhere this board can see — which is its own problem, because a night that isn't written down isn't bookable and isn't promotable.

One hard data point supports the first reading: Tuesday 15 September ran without live music and did 81 checks against 148–176 on the two August live-music Tuesdays.

Also visible only in August — and only in one place

Every activation in the table above appeared on Tablelist and nowhere else. Not the website, not /events, not Tock. The anniversary weekend — the single biggest date of the year — was bookable on one surface out of six.

The one that makes the whole grid moot

The public /events page renders empty. All six events are present, correct and future-dated in SpotHopper admin. Verified across two days with cache-busted loads; the promotion toggle was ruled out.

The working hypothesis is that repointing the Events nav item away from /events to the Tablelist URL detached the events module from the page. Until that is resolved, every correctly built SpotHopper event is invisible — including Sunday, which had been built properly all along and was wrongly reported as missing.

Two surfaces not in the grid, both dark

ManyChat — the FAQ is still factory placeholder text and paused. Finished replacement copy for all four conversation starters has been sitting ready to paste since 3 August.

Instagram bio — links to the website and Tock only. No Tablelist link, on the account with roughly 23.9K followers, for the platform that now carries all six nights.

Wrong names in public

Three retired names live on Tock: Live Music Tuesdays, Thursdays - Ladies Night, Bloom Friday Nightlife. Tablelist carries "Sunday Brunch" across 17 dated instances. The most recent Instagram creative on record still reads "LIVE MUSIC TUESDAYS."

Filler events that contradict the venue

SpotHopper injects stock "national day" events that are not in the events admin and cannot be deleted from there — removal needs an account-level setting or a support request. Two of them advertise Monday hours of 11 AM to 11:59 PM on days Bloom is closed. They are currently invisible only because the events page is blank, and should be expected back the moment it renders.

Data hygiene in Toast

Several high-volume SKUs carry no Sales Category — Patron Reposado, Don Julio Blanco and Añejo, Clase Azul, Ketel, Grey Goose, Maker's, Woodford, Corona, Modelo, Lemon Drop, Street Corn Ribs, the Happy Hour egg roll and the taco specials. Coke, Diet Coke, Sprite and several wines are tagged Liquor. Pepperoni pizza rang under three different names this year. Two archived drinks are still ringing.

This is not cosmetic. Every category-level number on this board — food cost percentage, beverage share, promo share — is built on those tags.

What's coming

Four dated tentpoles between now and the end of the year, plus two month-long seasons. Targets are from the master event calendar. The countdown column is measured from 17 September 2026.

Those six add up to a $130K–$210K stretch across fifteen weeks, against a venue currently running about $44,600 a week. Q4 is not a bonus — it is the difference between the year working and not.

Halloween is the one that needs a decision this week

It is a Saturday, it is the second-biggest single date left in the year, and both of its early gates have passed with nothing on the record. Talent should already be contracted. At T−44 the concept can still be caught up in one sitting; at T−30, with booking paths due, it cannot.

Thanksgiving Eve is the larger number — $30K–45K, the biggest night of the year — and its concept gate lands in nine days. It is not late yet. It gets late on 26 September.

One blocker that cannot be caught up later

A2P 10DLC registration. Until it is filed, the SMS list cannot be used at scale — which removes the T−7 gate from every tentpole above. Registration takes weeks, not days. If it is not started before the Halloween push, it will not be available for Thanksgiving Eve or New Year's Eve either.

Open at the concept level

QuestionWhy it matters
Is Wednesday's offer the right offer? Wine is 2% of sales and the night is built on half-off bottles. The Tock gap has to close before this can be answered honestly.
Is live music continuing on Tuesday? It is in the night's name. It did not run on 15 September, and that Tuesday did roughly half the checks of an August live-music Tuesday.
What is Saturday's identity? Sold Out Saturdays is a name and a price band, not a concept. It is the only night with no host, no theme and no recurring talent on the record since 29 August.
Who is building the October and November activation calendar? Nothing has been scheduled since August. Thursday alone carried four themed editions that month.
Are the birthday offers actually live? Mon–Thu birthday discounts and cards have been a standing concept for months and have never been confirmed running.

What would make this board self-maintaining

Three things, none of them large:

A weekly walk

One person opens all six surfaces every Wednesday and checks them against section 01. It takes twenty minutes and it is the whole job of the Listings Owner seat.

Activations written down before they're booked

Every activation in August existed on Tablelist and nowhere else. If it lands in one place, it is a booking, not a campaign.

Costed items in xtraCHEF

Only 19 of 240 menu items have a reliable cost. The top 25 by revenue are about 60% of the matrix. Until those are costed, every margin call on this board is directional.

This board is a snapshot assembled from Toast pulls and platform audits. It will be wrong in places, and the people most likely to know are the ones working the nights.

If a special has changed, a price is off, an activation is booked that isn't listed here, or something in section 05 has already been fixed — say so. Naming yourself is optional; your role is not.
